Single mother of three, April Kimbler, faces this dilemma on a routine basis.
She says, "It's hard because it's so expensive."
With only one income, Kimbler admits, eating healthy has been a challenge. Which is why she decided to attend Wednesday night's "Eating Healthy on a Budget" seminar.
An assistant from Texas A&M's Agrilife Extension Service demonstrates how to prepare a healthy meal.
Those in attendance then had an opportunity to sample a meal that included all the food groups and learn how to prepare it, proving that eating healthy is possible.
Kimbler says, "It's not as hard as I thought. Just trying to find the time to do it."
Now Kimbler and her three children will go home with a bag full of all the ingredients used in their meal, to begin their new and healthier lifestyle.
The next workshop will be held at Lee Elementary School on April 27, at 11:30am.
