Researchers at LSU say they've solved the mystery of why dark chocolate is good for people.
Researchers at LSU say they've solved the mystery of why dark chocolate is good for people.

Using a model to simulate digestion, researchers discovered compounds in chocolate are absorbed by 'good' bacteria in the stomach.

Those microbes then grow and ferment producing anti-inflammatory compounds. When those compounds are absorbed by the body, they reduce the inflammation of cardiovascular tissue and decrease the risk of long-term stroke.

Scientists say combining dark chocolate with sold fruits like pomegranates and acai could provide even greater health benefits.
